Cupcakes Don't Have to be Edible!

Cupcakes don't have to be edible!    I made these for my friend Michelle's baby shower.  These are really easy and inexpensive to make. The ingredients (materials) are:       Baby Blankets, onesies, coffee filters and ribbon.  I'm not gonna take credit for these, I got the idea of off youtube :)  Here is the link for the video for step by step instructions! Baltimore Oriole Happy Birthday Val Cupcakes!

Happy Birthday Val!! Baltimore Oriole Cupcakes

For my friend Val's birthday, my friend Michelle (favorite cupcake assistant previously mentioned in shower  cupcakes), Holly and myself whipped out Val's favorite, pound cake cupcakes with a whole strawberry in the middle.

These cupcakes are really easy, just a little time consuming, however when you get three girls together (and a toddler to help with taste testing) these took no time at all!! We cheated by using a box mix, but in all honesty, they were still delicious so who cares! We used  Betty Crocker cake mix. Mix these as instructed on the box, and then bake at 350 for 20 minutes.

To put the strawberry in the middle, its stupidly easy, just cut a hole in the cupcake the size of the strawberry and push that sucker down in there. (Tip: make sure the strawberry is dry so it doesn't leak). You want to have it so the strawberry is flush with the top of the cupcake. See picture.
The icing was really easy to make. The icing is a whipped cream butter cream.

Ingredients:
1/2 cup butter
3 cups powdered sugar
1 tbs Vanilla
3 tbs Whipping Cream

Cream together the butter and powdered sugar, then add vanilla and whipping cream.

The Birthday Girl Loved them as did a few homeless guys in baltimore :)

Pumpkin Patch Cupcakes

Pumpkin Patch Cupcakes!

For my brother-in-law's birthday last year he told me he wanted pumpkin flavored cupcakes. I used the below recipe found on (i think) of

INGREDIENTS:
18.25 oz Betty Crocker Golden Vanilla Super Moist Cake Mix*
2 tsp pumpkin pie spice
1 cup canned 100% pure pumpkin
1 cup water
For the Pumpkin Cream Cheese Frosting:

8 oz Philadelphia 1/3 fat cream cheese (do not use fat free)
1/2 cup pureed pumpkin (canned is fine)
1 tsp vanilla extract
1 tsp cinnamon
1 tsp pumpkin pie spice
5 tbsp packed brown sugar

Directions:
Preheat oven to 350°. Line a cupcake tin with cupcake wrappers.
Combine cake mix and pumpkin spice in a large bowl. Add pumpkin puree and water, mix about 2 minutes.
Fill cupcake liners 2/3 full and bake about 20 - 25 minutes, or until a toothpick inserted comes out clean.
For the frosting, combine the cream cheese, pumpkin, vanilla, cinnamon, pumpkin pie spice and brown sugar until smooth. You can use a spatula to ice the cupcakes or pipe them which may require making more frosting.

My favorite cupcake partner (next to my 5 year old nephew ofcourse) Michelle and I busted out 48 pound cake cupcakes filled with a whole strawberry.  These are topped with whipped buttercream icing (which took two trys) and garnished with a candy'd S which are dusted with wilton shimmer powder.

These were made with a lot of laughter, love and dirty jokes! We worked on these all day long and it was worth it. To this day people are still talking about them. Couldn't have done it without my girl Meesh :) Love you!!

Peanut Butter and Chocolate Cupcakes for my Seester!

Happy Birthday SEESTER!!!
Chocolate and Peanut butter is definitely our family's favorite combination when it comes to deserts! My sister makes this AMAZING chocolate and peanut butter pudding pie, so when it came time for her birthday I wanted to make her something special.

These are your basic homemade chocolate cake, injected with peanutbutter mousse.  These are topped with a swirl of chocolate buttercream and whipped peanut butter icing and garnished with a mini-peanut butter cup.

Irish Car Bomb Cupcakes!

These Irish Car Bomb Cupcakes are perfect for St. Patrick's day.

Chocolate cake made with Guiness Beer. Then filled with Chocolate G'nash made with Jameson. Topped with Baily's Buttercream Icing. I made these for my husband's birthday a few weeks before St. Patrick's day, and we gave some to the bartender and staff at the place we were celebrating.  The bartender compared these to sex. Enough said!

S'more (S'mo) Cupcakes!!

Going Camping?? Bring S'more (S' mo) Cupcakes!!

These cupcakes are the perfect addition to your camping or "glamping"  trip!!

Mix graham crackers and butter and press into the bottom of each cupcake liner. Then make your favorite chocolate cake recipe by either box or scratch, and bake as directed.  The icing is a marshmallow icing I found over the internet. It's basically eggwhites, sugar, vanilla and cream of tartar. Beat over heat and until sugar is dissolved then take to mixer (Stand-up works best) until light and fluffy.  Take mini-torch and toast! Which is my favorite part! Although, I do have to fight my husband for it! You can also garnish with a Hershey's Chocolate Bar and graham cracker, although they're impressive enough by itself.
